Yesterday, we celebrated the last day of the Tokyo 2020 Olympic Games. After 2 weeks of incredible athletic performances, the most unique Games in history (I mean, the 2020 Games were held in 2021…need I say more?!?) came to an end.
The motto for this year’s Olympics was Faster, Higher, Stronger – Together, and boy did Canadians deliver. They went faster, flew higher, and were stronger than ever before. And they made us proud. So proud.
Penny Oleksiak brought home 3 medals, making her the most decorated Canadian Olympian of all time (at just 24!).
Damian Warner made history as Canada’s first Olympic decathlon champion, setting an Olympic record along the way.
The women’s soccer team changed their medal colour and came out on top for the first time ever in an absolute nail biter.
Andre De Grasse won Canada’s first 200m gold medal in 93 years.
Laurence Vincent Lapointe paddled her way to a silver in the first women’s Olympic canoe/kayak sprint.
…I could list every single medal winner, but you already know all of these highlights. You know their names. You’ve seen their races and games. You’ve read the articles.

What you may have missed are some of the moments that remind me why I love the Olympics. It’s not about the medals. It’s not about breaking records. Those are great and fun to watch (and cheer for). But what I really love are those quiet moments.
Moments of camaraderie, inner strength, shared celebration. Dignity in the moments following defeat. Uplifting and celebrating fellow competitors.
These moments don’t usually make the highlight reels. They aren’t bright and shiny. They often aren’t remembered after the Olympic flame is extinguished. But they leave an impact.
Here’s a collection of some of this year’s best.

This year, these moments hit a bit harder. People from around the world coming together. Cheering. Hugging. High fiving. Celebrating. Being together.
After 16 months of being separated, this felt special. It was exciting. It felt like a return to normalcy. Something we’ve all missed and can’t wait to return to. Spending time together. Working out together. Celebrating our successes together. Being together. Together.
We can’t wait until we’re together again. Less than one month now. We’re counting down the days.

Today’s Bite
Mexican Grilled Corn Salad
For those who absolutely love elote (Mexican grilled corn), this convenient, tossed-together salad offers up the flavours of elote while also using fresh produce from the farmers’ market. Recipe from Bon Appetit.

Ingredients:
- 4 tbsp extra-virgin olive oil, divided
- 6 ears of corn, husked, kernels cut from cobs
- 1 small shallot, cut into rings
- 1 red chile (such as Fresno or red jalapeno), sliced into rings
- 5 tbsp fresh lime juice
- Kosher salt
- 3 tbsp whole-milk Greek yogurt
- 1 oz finely grated parmesan (about 3 tbsp), plus more for serving
- 1/2 cup cilantro leaves with tender stems, coarsely chopped, divided
Directions:
- Heat 1 tbsp oil in a medium skillet, preferably cast iron, over medium-high. Add one-third of corn kernels and cook, undisturbed, until lightly charred underneath, 1–2 minutes. Toss and continue to cook, tossing occasionally, until lightly charred all over, 2–3 minutes longer.
- Meanwhile, mix shallot, chile, lime juice, and remaining 3 tbsp oil in a medium bowl; season with salt. Let sit at least 5 minutes or up to 1 hour to let shallot soften slightly. Add charred corn, remaining corn kernels, yogurt, 1 oz parmesan, and half of cilantro; season with salt. Toss to combine.
- Top corn salad with more parmesan and remaining cilantro just before serving.
