I remember last spring I decided to unearth my green thumb and I planted my first vegetable garden. Having not read the package instructions a few vegetable seedlings were buried with no chance of survival, but my tomato and basil plants flourished! Therefore, in celebration of my first ever home grown tomato I decided to make a very easy but tasty salad recipe. This salad can be made in 10 minutes and goes well with grilled chicken or fish.
Tomato Basil Salad
6 tomatoes, diced
1 small cucumber - peeled, quartered lengthwise, and chopped
3 green onions, chopped
1/4 cup fresh basil leaves, cut into thin strips
3 tablespoons olive oil
2 tablespoons balsamic vinegar
3 tablespoons crumbled feta cheese (optional)
Add salt and freshly ground black pepper to taste
In a large bowl, toss together the tomatoes, cucumber, green onions, basil, olive oil, balsamic vinegar, and feta cheese (optional). Season with salt and pepper.
