Naomi’s Healthy and Delicious Coconut Almond Cookies
Preheat oven to 350
Mix together in a bowl:
3 cups almond flour
1.5 cups unsweetened coconut flakes
2 tbsp ground flaxseeds
In a pot stirring on medium heat:
1/2 cup coconut oil
3/4 cup agave
Remove from heat and add 1tsp vanilla extract
Add dry to wet and mix thoroughly with a wooden spoon. The batter should be a little wet and sticky.
Make cookie balls about 1/2 inch thick. The cookies will not spread and will retain whatever shape you make.
Bake at 350 for 15 mins
Add an almond in center if you like when fresh out of the oven. Let cool
