WHITE CHOCOLATE-GINGER-ALMOND GRANOLA BARS

1 large egg
1/2 cup packed brown sugar
4 tablespoons unsalted butter, melted
3 tablespoons honey
2 tablespoons milled flax seed
1 teaspoon vanilla extract
1/2 teaspoon almond extract
1/2 teaspoon salt
1/4 teaspoon ground cinnamon
3/4 cup candied ginger or dried cranberries
2/3 cup finely chopped almonds, toasted
1/2 cup sweetened flaked coconut
1 1/4 cups quick oats
3/4 cup rice Krispies(or bran for a healthier bar)
Melted white chocolate, for drizzling

Preheat oven to 350 degrees. Line an 8x8-inch baking dish with parchment paper or foil; coat foil with nonstick cooking spray.

In a large mixing bowl, whisk together egg, brown sugar, butter, honey, flax, vanilla, almond extract and cinnamon until well combined; stir in ginger or cranberries, almonds, coconut, oats and cereal until combined. Evenly press mixture into prepared pan.

Bake 30 minutes or until golden brown.  Remove from oven and cool completely. Lift foil out of pan and slice into bars. Drizzle with white chocolate and allow to dry.

These bars make the perfect party gift.
